Since its opening in November 2017, The Glass Knife has been crafting exquisite cakes, pastries and more at their eatery in Winter Park. Bûche de Noël
Flourless chocolate cake layered with morello cherry pâte de fruit, velvety cherry cake, fluffy whipped cream, crisp white pearls and tangy cherry jam, enveloped in a rich chocolate mousse, finished with a vivid, Santa-red glaçage and a fondant sugar buckle. A must-have, contemporary take on the Yule Log!
A smooth, Onyx Coffee-infused pastry cream center, touched with salted caramel and a delicate coffee crunch atop a chocolate biscuit beautifully encased in a dark chocolate mousse, finished in a velvety, green-hued white chocolate.
Intricate layers of aromatic pear pâte de fruit, caramelized pear compote, RumChata cream and gingerbread cake enveloped in a velvety Dulcey chocolate mousse, coated in a vibrant caramel glaçage, finished with a ginger white chocolate cream.
